Event Description

Let's cover the basics of making sauerkraut and fermented vegetable pickles. Emily Paster will guide you through the science behind lacto-fermentation, including the ratio of salt to water and salt to vegetables; the proper fermenting environment; knowing when you pickles are ready; trouble-shooting and the secret to avoiding mushy pickles. No special equipment necessary. This is a flexible, easily adaptable technique and you will leave with the confidence to make your own tangy fermented vegetables that are loaded with healthy probiotics!

A lawyer turned food writer, Emily Paster brings passion, a sharp intellect and attention to detail to her globally-inspired, Jewish cuisine. She is the author of four cookbooks, including the best-selling Epic Air Fryer Cookbook. Her latest book Instantly Mediterranean: Vibrant Satisfying Recipes for Your Instant Pot, Electric Pressure Cooker & Air Fryer was released in September 2021. Space is limited. Culinary classes are designed for adults 18+ and limited to one class per month, per Arlington Heights cardholder. Register any time from July 2 at noon to July 3 at 11:59 a.m. to join the lottery for a chance to attend Fermentation. Individuals will be chosen at random and notified on July 3.
